Altbier is German for “Old Beer”, this refers to the “old” style of brewing using an ale yeast (As opposed to a lager yeast fermentation which is a relatively new process).  This beer originated in the Westphalia region of Germany in a town named Dusseldorf.  Due to the cool climate of Dusseldorf, Altbiers employee an ale yeast that has evolved over time to ferment at somewhat cooler temperature than that of other ale yeasts. This cool fermentation produces subtle yeast derived esters and leaves a clean malty beer.  In addition to this cool clean fermentation, altbiers are then lagered at cold temperatures to help smooth and refine the beer.  The result of this is a very clean and hoppy red ale.

Coming in at 6.2% ABV and IBUs Little Red Cap is an easy drinking hop forward beer worthy of its heritage. We use a bit of Cascade hop to give it an “American Twist” while maintaining its German heritage.  This beer won a Gold Medal at the 2011 and 2016 GABF and a Bronze at the 2012 GABF, a Gold at the 2017 US Beer Open, and a Silver Award at the 2016 World beer cup.  More about this beer: Little Red Cap

 

FearlessYouth_Tap_FinalFearless Youth is our award winning Munich Dunkel Lager. The Munich Dunkel (pronounced doonkel) lager originated in Bavaria.  Dunkel (German for Dark) lagers are dark, malty lagers with just a hint of noble hops and a slight hop bitterness.  The hallmark of this style is the bready, biscuity notes of melanoidins of the Munich Malt.

Fearless Youth is the first beer that Aaron and Don developed in their home brewing days and was the first official beer that they agreed would be produced at Grimm Brothers Brewhouse.  Coming in at 5.8% ABV and 22 IBUs Fearless Youth is true to its style.  Featuring a complex bready malt with just a hint of Hallertauer hops.  Fearless youth features a clean easy refreshing finish. This beer won a Bronze at the 2013 GABF and a Silver at the 2015 GABF.

Snowdrop is our Kottbusser Ale. Kottbusser ale is a beer that originated in a town called Cottbus in Germany.  This beer was outlawed due to the German Purity Laws (Reinheitsgebot) enacted in 1516.  This law stipulated that production of beer could only use 3 ingredients (Water, Barley, and Hops).  Since the Kottbusser used Honey, Molasses, Wheat, Oats, Barley, and Hops, the production of this beer had to be stopped.   Snow Drop is our recreation of this beer that had been lost to history.  It comes in at a 7.1% ABV and 10 IBUs.  Snow Drop features a light crisp palate with just a hint of honey and molasses and a beautiful bouquet of noble German hops.   In 2015 this beer won a Bronze in the Historical category at GABF  More About this Beer Snow Drop Video

 

 

 

Our Traditional German style Hefeweizen fermented with Blood Orange Puree.  The German Hefeweizen style is traditionally a blend of wheat and pilsner malt, this combines with a yeast that produces a unique ester profile with  flavors of banana and cloves with an often dry or tart finish.  The hop profile tends to be on the low side.  The “Hefe” prefix means “with yeast”, hence the beers unfiltered and cloudy appearance.  At the end of fermentation we add Blood Orange puree to accentuate the citrus character and produce a very drinkable wheat beer that is far from sweet and fruity, but has just the right amount of citrus bite.

 

 

 

At first glance, Robber King looks black as night, but as the light hits the glass the ruby-brown highlights shine through to the creamy tan head. The nose explodes with strong notes of chocolate, caramel, and roast leading you right down the chocolate highway as you take your first sip. The Robber King will leave behind lingering notes of dark chocolate, caramel, bread crust and roast dancing on your palate. Having just one will may result in robbing yourself and your palate of the medium-full bodied chocolate-roasted experience Robber King has to offer.

 

 

 

Like a mythical dragon summoned with powerful magic, our ever changing Dragon Flower IPA is an example of our dynamic ability to use an array of hops. Crafted in small batches, these IPAs are meant to be consumed quickly. They will represent historical styles, modern styles and IPA styles not yet realized.
